versons le reste de l\u2019huile tr\u00e8s doucement, sans arr\u00eater de fouetter.<\/p>\n<p>La mayonnaise \u00e9paissit au fur et \u00e0 mesure !<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Courte explication..<\/strong><\/p>\n<p><strong>\u00a0<\/strong><strong>Le jaune d\u2019\u0153uf contient de la l\u00e9cithine, une mati\u00e8re grasse qui poss\u00e8de des affinit\u00e9s avec l\u2019huile.<\/strong><\/p>\n<p><strong>Lorsque tu fouettes le m\u00e9lange, tu brises l\u2019huile en minuscules gouttelettes et tu lib\u00e8res la l\u00e9cithine contenue dans le jaune d\u2019\u0153uf. <\/strong><\/p>\n<p><strong>La l\u00e9cithine enrobe chacune des gouttelettes d\u2019huile et, du coup, les emp\u00eache de se r\u00e9unir.<br \/>\nPlus tu ajoutes d\u2019huile, plus il y a de gouttelettes. Lorsqu\u2019elles sont tr\u00e8s nombreuses, les gouttelettes sont tass\u00e9es et ont du mal \u00e0 bouger. Ton m\u00e9lange est ferme et homog\u00e8ne. <\/strong><\/p>\n<p><strong>L\u2019eau provenant de la moutarde et du jus de citron maintient les gouttelettes d\u2019huile en suspension.<\/strong><\/p>\n<p><strong>Une dispersion de gouttelettes d\u2019huile dans l\u2019eau est une \u00e9mulsion. Ta mayonnaise est donc une \u00e9mulsion.<\/strong><\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h2><strong>Passons \u00e0 la seconde de nos exp\u00e9riences.. <\/strong><strong>Qu'y a-t-il de si mer<\/strong><strong>veilleux\u00a0?<\/strong><\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>Pour r\u00e9sumer bri\u00e8vement: <\/strong><strong>un grain de ma\u00efs contient des granules d\u2019amidon (= sucre lent) contenant de l\u2019<\/strong><strong>eau<\/strong><strong>\u00a0<\/strong><strong>;<\/strong><strong> tout \u00e7a enferm\u00e9 dans une petite coquille jaune.<\/strong><\/p>\n<p><strong>Lorsque l'on fait chauffer les grains de ma\u00efs, l'eau contenue dans les granules d\u2019amidon entre en \u00e9bullition et se transforme en vapeur. <\/strong><\/p>\n<p><strong>Comme la vapeur occupe un plus grand volume que l'eau liquide, l'enveloppe est alors soumise \u00e0 une forte pression<\/strong> <strong>et se rompt subitement. Visuellement, le grain \u00ab\u00a0\u00e9clate\u00a0\u00bb. <\/strong><\/p>\n<p><strong>Le grain a alors gagn\u00e9 pr\u00e8s de 30 fois son volume initial. Des \u00e9tudes montrent que pour un \u00e9clatement optimal, le grain doit avoir une teneur en eau de l\u2019ordre de 14\u00a0%.<\/strong><\/p>\n<p><strong>Pas mal non?... Oui, mais alors, pourquoi seul le ma\u00efs sp\u00e9cial \"pop-corn\" fait du pop-corn? Pourquoi est-ce que n'importe quel ma\u00efs \u00e0 poulet ne ferait pas l'affaire? Il semble bien que le ma\u00efs sp\u00e9cial ait une coque plus solide, qui ne se fissure pas \u00e0 tout bout de champ, mais qui explose radicalement quand les conditions de pression deviennent insoutenables.
